後來,“假燕菜”的作法傳到了民間,人們用蘿蔔、肉絲、雞蛋、香菜等原料來烹制“假燕菜”。由於勞動人民不斷改進烹制方法,使民間的“假燕菜”越做越美。其味道酸辣鮮香,別具壹格,成了洛陽地區的壹道名菜。久而久之,人們便稱它為“洛陽燕菜”。
此菜雖名高味美,但制作並不復雜。作時,先把蘿蔔切成約壹寸半的細絲,用冷水浸泡後,再用細綠豆粉拌勻,上籠蒸五分鐘後,晾涼入溫水泡開,撈出後灑上鹽水,再蒸透即可。食時,配上雞肉絲、豬肉絲、海米、蹄筋絲、玉蘭絲、魷魚絲、海參絲和紫菜絲,用高湯烹制,再放點香菜、韭黃。其味道極其鮮美,湯清利口,營養豐富。
