分辨真假的方法
用手搓:用手搓壹搓米,看手上有沒有染料,如果有黑色染料,就是假米。

看顏色:正宗的黑米表皮是有光澤的,顏色有深有淺,而染色的黑米卻沒有光澤,顏色壹致。

看表皮:正宗的黑米用指甲抓下來的表皮是片狀的。如果是粉末狀的那就是劣質黑米。

看米心:正宗黑米的米心是白色的。普通大米的米心是透明的,沒有顏色。如果染色的黑米是用普通大米染成的,那麽染料的顏色會滲透到米心裏去,變成黑色。

看泡米水:正宗黑米的泡米水是紫紅色的,稀釋之後也是紫紅色或偏紅色。如果泡出的水像墨汁壹樣經過稀釋以後還是黑色,那肯定就是假米了。

加白醋:黑米水遇到堿會變綠,遇酸會變紅。正宗的黑米水遇到酸就會立刻變紅。隨機取壹些粒黑米放入杯中,往杯子中倒白醋,充分攪拌,壹會兒後白醋變紅為真黑米,變黑為假黑米,有少量紅色並黑色者為真黑米被提取花青素後又染黑所致。
