做饅頭能用小蘇打發面嗎

可以用小蘇打發面。發面加入小蘇打時,可以再加壹定量的食用醋,這樣不僅可以產生大量的二氧化碳氣體令饅頭更加膨松,而且還可以中和掉小蘇打的堿味。

用小蘇打發面的具體步驟:

1、發酵粉用35度左右的溫水,充分溶解後備用。壹斤面粉要放三兩小蘇打,即10:3的比例。

3、放在溫暖潮濕的地方發酵。

4、把發酵好的面團,再摻面粉揉勻,揉成型,然後放在烤盤或者蒸籠裏進行2次發酵,不能少於半小時。這樣就完成了。
