 牛肉"及壹歲以上二歲左右的牛肉叫Beef。 牛仔(Veal) 壹般為三個月至壹年之間的雄性小牛的肉,由於牛仔發育尚不完 全,部位細節區分不明顯,但就全身而言,不同部位的烹調手法也不同。腿 (Leg), 適合燒(Roast), 烤(Baked), 煎(Panfry), 炸(Fry),炒(Sauteed);脊 背兩旁(Chop), 燒、烤、扒;背部(Back), 燒、烤;肩部(shoulder), 燒、烤。 燜(Braise)、燴(Stew);胸部(Breast),燜、燴 、煮;後腿(Feet),可制成 牛仔膠凍(Aspic),腦(Brain),煎、炸;肝(Liver)煎、炸、局;腰子(Kidney) 燜、燴 、煎;牛仔胸腺體(Sweetbread),煮熟後煎炸;舌(Tongue)適合燜、 燴,小牛心(Heart),適合燜、燴;骨(Bone)調制湯羹、及汁;腿關節適合燒、 燜、燴。
